1.Prepare boiling water cans. Heat the jar and lid in boiling water until ready to use. Don't boil. Put the strap aside.
2.Combine vinegar, sugar, and salt in a large saucepan. Bring to a boil and stir to dissolve the sugar. Add corn, red and green peppers, celery, onions, mustard, celery seeds and turmeric. Reduce heat and simmer for 15 minutes, stirring often.
3.Scoop the hot seasoning into the hot pot, leaving a 1/2 inch of space. Clear air bubbles. Wipe the rim. Place the hot lid in the center of the jar. Use the strap and adjust it until the right fingertips are tight. Put the jar into the boiling water jar. Repeat the above steps until all the jars are filled.
4.Treat the jars for 15 minutes and adjust according to the altitude. Turn off the heat, remove the lid, and let the jar stand for 5 minutes. Remove the jar and let cool. Check that the lid is sealed after 24 hours. When the center is pressed, the lid cannot bend up and down.
