Chocolate Cherry Jam

1.Mix the first 3 ingredients in a 4-ounce bottle. Stainless steel or enamel Dutch oven. Bring the mixture to a boil, without stirring, keep stirring at too high a temperature.
2.At the same time, stir the sugar and cocoa until combined, while adding the boiling cherry mixture. Return the mixture to a complete rolling boil. Cook for 1 minute, stirring constantly. Leave the heating. If necessary, remove foam.
3.Use a spoon to pour the hot jam into the hot jar, leaving 1⁄4 inch of space. Clear air bubbles. Wipe the rim of the jar. The lid in the center of the jar. Attach the strap and adjust it until your fingertips are tight. Put the jar into the boiling water jar. Repeat the above steps until all the jars are filled.
4.Treat the jar for 10 minutes and adjust the height. Turn off the heat, remove the lid, and let the jar stand for 5 minutes. Remove the jar and let cool.
